My sister got married in November, but before that we went to Greenville, NY for a weekend to celebrate her bachelorette party. We kept the group pretty small. Originally we were supposed to go to South Carolina, but last minute had to cancel and switch to an in-state get away. The Woodhouse Lodge was incredibly accommodating. I added the link below to their website.



The first night we got their, they prepared a wine tasting and cheese pairing for us. We were able to sit on their patio, outside their tavern, which was decorated with strings of lights, wooden tables and a fire pit. We tasted 3 different wines, and their cheese pairings.

On Saturday, we went for a hike during the day and then got some lunch and beers afterwards. We stopped by The Tasting Lab which actually was INCREDIBLY accommodating for dietary needs. They had gluten free ciders which we tried a few of. They also had gluten free buns. Their menu is super mix and match. You are able to pick your toppings, your protein and then your bun. I got an impossible burger on a gluten free bun.


They don't have a website but if you're ever in Greenville, NY this was definitely a place I'd go back to.





Saturday night, The Woodhouse Lodge did a private dinner and wine pairing for us. It was in a private room that had a full working kitchen, dining room and couches with a fireplace. It was overall decorated impeccably. We chatted with the owner for a bit and she said her and her husband took over a motor lodge a few years ago and went room to room updating and decorating. It was fantastic.


10/10. Would recommend. Would return.





These OAT + PUMPKIN HARVEST BARS are a perfect thanksgiving dessert while still being healthy and eating clean! They take less than 10 minutes to prep and made the apartment smell AMAZING.



Andrew and I are doing the Fast Metabolism Plan by haylie pomroy. She’s a nutritionist and her fast metabolism plan focuses on eating clean foods, no dairy, no sugar and very specific foods on specific days.


These OAT + PUMPKIN HARVEST BARS are inspired from her recipe and we can eat them in the 3rd phase of the plan, aka Friday/Saturday/Sundays! Even if you aren’t on her fast metabolism plan these pumpkin bars are PHENOMENAL anyway!

Fast metabolism diet



Ingredients for the bars:

1 tsp Coconut oil, for greasing the pan15-ounce can pure pumpkin

1 cup coconut flour @bobsredmill

2 tbsp stevia

2 ½ teaspoons pumpkin pie spice

3/4 teaspoon baking soda

1/4 teaspoon sea salt

3 eggs



Ingredients for the crumble:

1/2 cup Gluten free rolled oats

3 tbsp pomegranate seeds

2 tbsp coconut oil @carringtonfarms


Directions:

1. Preheat the oven to 350 degrees

2. Add a tiny amount of coconut oil to a a 9-by-9-inch. Spread oil around covering the sides so it doesn’t stick.

3. In a large bowl, mix together pumpkin, coconut flour, Stevia, pumpkin pie spice, baking soda, sea salt and eggs.

4. Next, add the batter to the baking dish, spread out mixture smoothly.

5. In a small mixing bowl combine rolled oats, coconut oil and pomegranate seeds for crumble topping. Mix together until mixture is forming clumps.

6. Distribute on top of pumpkin batter, slightly pressing into batter so it stays in place.

8. Bake for 30-35 minutes.

Deep Indian kitchen also has their own naan but I paired it with my homemade gluten free one!


Gluten Free Naan


Ingredients:

3/4-1 cup fat free greek yogurt

1 cup gluten free flour

1 tbsp Parsley

1 tbsp diced Onions

1 tsp fresh minced garlic


Directions:

  1. Dice up approx 2 tbsp of onions and cook with garlic for approx 3-4 minutes.

  2. Add onions and garlic to a separate bowl. Mix in gluten free flour, parsley and yogurt. Dough should be moist but not too sticky.

  3. Form 1 ball of dough. Cut in half and with your hands create 2 flat naan pieces.

  4. In a cast iron skillet, cook the naan for 5-6 minutes on on side, flip, and cook for another 5-6 minutes on the other side. Naan will start to turn brown and crispy right before it is time to flip over.

  5. Remove from skillet, set aside and serve with your choice of Indian food.
