All. The. Breakfast. Sandwiches. Seriously I cant ever get enough of breakfast... or brunch... sandwiches. It’s my favorite way to start the day and these days I’m focusing on quick healthy meals that make me happy. This QUICK BRUNCH WAFFLE SANDWICH took 15 minutes, 1 frying pan...and 1 toaster... to complete! Super easy for anyone to make!





Quick Brunch Sandwich Ingredients

2 gluten free waffles

1 egg

1 Tbsp coconut flour

1 Tbsp oat milk

2 slices of ham

1/2 avocado

1/3 cup spinach

2 Tbsp Santa Fe sauce .



Santa Fe Sauce Ingredients

2 Tbsp lite mayo

1 tsp hot sauce

1/2 roasted red pepper

1 Tbsp bbq sauce

1 tsp fresh garlic



Santa Fe Sauce Directions

1. Half a roasted red pepper from the jar and add to a blender.

2. Add mayo, hot sauce, bbq sauce and garlic. Then blend until all ingredients are fully combined.

3. Add to dipping bowl and serve with salad, fries or veggies!



Quick Brunch Sandwich Directions

1. Combine egg, spinach, milk and four in a bowl.

2. In a frying pan, spray with cooking oil and pour the batter in.

3. Cook on medium heat with top on for approx 3-4 minutes until patty is puffed up and not wet.

4. Remove from pan and place on top of roasted waffles.

5. Top with ham, sliced avocado and sauce!.

So fun fact: I didn’t know what a panzanella salad was before I started binge watching top chef. For all those in my boat, it’s a Tuscan chopped salad with onions, tomatoes, cucumbers and soaked stale bread. I made this gluten free PANZANELLA SALAD WITH GRILLED CHICKEN bowl.  I used @bfreefoods Italian loaf for the bread in the salad. I seasoned it with garlic and herbs, cut it into cubes and toasted them before soaking them in the olive oil and salad, essentially making gluten free croutons!





Ingredients

1 lb chicken

1/3 cup balsamic glaze

2 Tbsp honey

1 tomato

1/2 cucumber

1 cup pulled mozzarella cheese pieces

1/2  @bfreefoods Italian loaf

Olive oil

1 avocado


Directions

1. Combine balsamic glaze and honey In a large bowl. Add chicken and marinate for 1-2 hours.

2. Once marinated, grill in the air fryer for 15 minutes, flipping over after 7 minutes. The chicken should be thoroughly cooked and charred around the edges.

3. Once chicken is cooked, remove and set on cutting board before slicing.

4. While the chicken is cooking, slice the Italian loaf into 1/2” cubes. Spray with cooking spray, season and bake on a lined cooking sheet for approx 5-7 minutes at 400.

5. In a serving bowl, add your diced tomatoes, diced cucumbers, shredded mozzarella, splitting all ingredients between two bowls for 2 servings.

6. Top with sliced chicken and avocado. Dress with olive oil, salt and pepper.

7. Enjoy!




We're all chefs these days. With just 15 minutes and 5 ingredients, I created this CHICKEN TACO BOWL...and a movement of easy, delicious recipes for anyone to pull off in their own kitchen! #shoprite5ingredientchallenge




Ingredients:

2 chicken breasts

1 avocado

2 cups fresh spinach

2 cups white rice

1/2 cup corn




Directions:

1. Pre-heat the oven to 375. In a cast iron skillet, bake the chicken for 20-25 minutes until chicken is fully cooked.

2. Grill the corn. When the chicken is complete, set aside to rest before being sliced. Rinse and clean the cast iron skillet and add the corn. Bake at 375 until corn is crispy around the edges and charred. Approx 10 minutes.

3. Cook the rice. You can use any kind of rice you have available. Instant rice is the easiest and cooks the fastest. That's what I used here.

4. Begin to plate the bowl. Add the rice on one side, and the spinach on the opposite side. Top with charred corn.

5. Slice the chicken into 1/2" slices and place on top of bowl.

6. Slice the avocado in half. Set the non-pit side down onto the cutting board with the black side up. Begin to peel the skin off the avocado until it is bare. Then, cut the avocado into thin slices and add on top of bowl.

7. Enjoy!
