Quick Brunch Waffle Sandwich

All. The. Breakfast. Sandwiches. Seriously I cant ever get enough of breakfast... or brunch... sandwiches. It’s my favorite way to start the day and these days I’m focusing on quick healthy meals that make me happy. This QUICK BRUNCH WAFFLE SANDWICH took 15 minutes, 1 frying pan...and 1 toaster... to complete! Super easy for anyone to make!





Quick Brunch Sandwich Ingredients

2 gluten free waffles

1 egg

1 Tbsp coconut flour

1 Tbsp oat milk

2 slices of ham

1/2 avocado

1/3 cup spinach

2 Tbsp Santa Fe sauce .



Santa Fe Sauce Ingredients

2 Tbsp lite mayo

1 tsp hot sauce

1/2 roasted red pepper

1 Tbsp bbq sauce

1 tsp fresh garlic



Santa Fe Sauce Directions

1. Half a roasted red pepper from the jar and add to a blender.

2. Add mayo, hot sauce, bbq sauce and garlic. Then blend until all ingredients are fully combined.

3. Add to dipping bowl and serve with salad, fries or veggies!



Quick Brunch Sandwich Directions

1. Combine egg, spinach, milk and four in a bowl.

2. In a frying pan, spray with cooking oil and pour the batter in.

3. Cook on medium heat with top on for approx 3-4 minutes until patty is puffed up and not wet.

4. Remove from pan and place on top of roasted waffles.

5. Top with ham, sliced avocado and sauce!.
