This was definitely a freezer clean out meal. I had gluten free stuffing leftover from thanksgiving frozen that I had been dying to use. It was just traditional sausage stuffing that I defrosted and rebaked adding fresh maple chicken sausage, roasted zucchini, red onions, dried cranberries and pumpkin bread seasoning to. Then I made some CARROT FRIES 🥕🍟 on the side and added extra spinach 🍃.



CARROT FRIES 🥕

🌿Ingredients

3 large carrots

1 tablespoon garlic and herb seasoning

1 teaspoon of olive oil

Salt

Pepper


🌿Directions

1. Peel the carrots and then slice in half, then into long “French fry” slices.

2. In a bowl, mix with oil and seasonings.

3. In the air fryer, fry for 8-11 minutes on 390.




Breakfast and lunch definitely seem to be blending together recently. On one hand waffles scream breakfast... but on the other hand a sandwich is more lunch... this WAFFLE BRUNCH EGG SANDWICH has been the perfect weekday brunch solution.



🌿 Ingredients

2 gluten free @vansfoods apple cinnamon waffles 🧇

1 fried egg 🍳

3 tomato slices 🍅

Fresh spinach 🍃

Dairy free cheddar @daiyafoods 🧀

1 Apple maple chicken sausage


When I was in college we used to go to Applebees ALLLLL the time. My favorite was their oriental chicken salad, so I came up with a copycat recipe that is dairy free, gluten free and healthy! I’m mainly loving the dressing...which I’ve also repurposed on some other bowls. Its sweet and tangy and perfect on soy sauce veggies too.





🌿Dressing Ingredients

3 tbsp honey

1 1/2 tbsp rice wine vinegar

1/4 cup lite mayonnaise @hellmannsmayonnaise

1 tsp dijon mustard

1/8 tsp sesame oil

1 tablespoon lime juice



🌿Salad Ingredients

@caulipower cauliflower chicken tenders

2 cups romaine lettuce chopped

1 large carrot

1/4 cup cucumber chopped

3 tbsp sliced cashews

1/2 can of mandarin oranges

1/2 packet white rice @tastybite




🌿Directions

1. Mix together all dressing ingredients and refrigerate until ready to serve.

2. Slice up carrot for fries, coat with 1/4 tablespoon of sesame oil and cook in the air fryer for 8-10 minutes until crispy.

3. Along with the carrots, air fry the chicken tenders until crispy.

4. Slice lettuce, add to bowl. Top with sliced cashews, mandarin oranges, diced cucumbers, carrots.

5. Dice chicken and add to bowl.

6. Top with dressing and serve along side rice!
