Pizza, a murder doc and some wine made for the perfect Valentine’s Day weekend.


Friday night Andrew and I did a virtual wine tasting my family and friends to benefit @lccf.


Saturday we picked up make your own tye dye pizza kits from @rubirosa! They have gluten free pizza so we made own own pesto, vodka sauce and tomato sauce pizza. I love picking up food from @runirosa, we get a little road trip out of it and they have all the best gf options. We got gluten free mozzarella sticks, gluten free meatballs AND gluten free rice balls too!


We also watched the Crime Scene: The Vanishing at the Cecil Hotel on @netflix this weekend. I’m all about the murder docs and murder podcasts!

These gluten free, healthier CINNAMON SUGAR WAFFLES take 10 minutes to make and make for the perfect brunch!

Healthier Cinnamon Sugar Waffles


Ingredients:

1 3/4 cup gluten free pancake mix

1/3 cup oat milk

5 tbsp egg whites

1 1/2 tbsp cinnamon

1 1/2 tbsp coconut sugar


Top with powdered sugar, vegan chocolate chips and strawberries! Serve with apple maple chicken sausage.


Directions:

  1. Combine all ingredients in a bowl.

  2. Preheat waffle maker.

  3. Add mixture to waffle iron and cook on high for 3-5 minutes. (In my waffle iron it made 4 waffles. May need to adjust time/temp depending on waffle iron.)





Starting the day off with this HEALTHIER GLUTEN FREE FRENCH TOAST, blueberries, strawberries, blood orange and turkey bacon.


For the French toast I used egg whites instead of full eggs, and oat milk instead of full fat milk to keep it a little healthier for myself. I try to often use little hacks to be healthier to add up to one larger healthier way to eat.



Healthier Gluten Free French Toast

Ingredients:

3 slices of @canyonglutenfree bread

1/4 cup egg whites

2 tbsp coconut flour @fielddayproducts

2 tbsp cinnamon

4 tbsp oat milk @califiafarms

1 tbsp vegan butter

Vegan chocolate chips @enjoylifefoods


Directions:

1. Combine eggs, sugar, oat milk, and cinnamon in a shallow dish. Mix until fully blended together.

2. Melt vegan butter on medium heat in a large frying pan.

3. Dip one piece of bread into the mixture covering both sides. Then add to pan.

4. Cook both sides for 2-4 minutes on medium heat until edges become crispy!

5. Repeat until all the French toast is made! I put 3 pieces in the pan at once! You can do however many fit.

6. Top with goodies! 🍫🍓


Toppings:

+ All the syrup you want! I used sugar free!

+ All the berries you want! I used strawberries and blueberries.

+ Any extra breakfast goodies! I added turkey bacon!
