Simple + quick


Ingredients:

3 slices gluten free sourdough

1/2 cup marinara sauce

6 turkey pepperonis

1/3 cup vegan mozzarella

Garlic, parsley, oregano

Mikes Hot Honey


Directions:

  1. Preheat oven to 400.

  2. Slice toasts and add them to baking sheet.

  3. Top with sauce, vegan cheese, slices and pepperoni.

  4. Bake for 10-20 minutes depending on desired crispiness!

  5. Remove from oven, top with arugula and hot honey!

Every year Andrew makes ravioli from scratch for Christmas Eve! It’s a huge tradition in his family and this year I got to watch him make them!!




He usually does it the day before Christmas Eve and I’m always at work. But this year, silver lining, I was working from home (obvi!) and was able to watch!



He makes the pasta dough from scratch with his noni’s rolling pin she used when she lived in Italy!

Then he fills them with ping which is spinach, locatelli, spicy sausage and garlic.





GLUTEN FREE + VEGAN BLUEBERRY WAFFLES


When we were little my mom had a waffle maker that shaped the waffles like hearts. My sister and I loved it! So a few years ago when my sister saw a similar one she bought it for me! Hands down best gift.


I love making waffles, and they’re always gluten free. Recently I’ve made hashbrown waffles, loaded baked potato waffles, sweet potato waffles and these vegan waffles!

Ingredients:

1 1/2 cups oat milk

1 tbsp apple cider vinegar

2 cups gluten free flour

1 tbsp baking powder

1 tbsp brown sugar

1 tbsp vegan butter

1/2 cup blueberries


Makes 2-3 waffles... or 1 enormous one!


Directions:

  1. Combine all ingredients in a bowl. Mix.

  2. Preheat waffle iron to medium to high setting.

  3. Spray with cooking oil spray.

  4. Add to waffle iron. Cook until edges are crisp and waffle is browned.

  5. Top with extra berries or sugar!
