A few months ago Andrew and I stayed at The Virginia Hotel in Cape May and completely fell in love with it. We went back again in November to get away after my sisters wedding. We needed some quiet time between the wedding and the holidays and Cape May is such a relaxing getaway. Cape May has such a Victorian vibe and I'm so into it. Cape May is one of the oldest resort towns in the country. It was founded in the 1800's and every house is preserved so nicely. It looks like you've stepped back in time as soon as you pull into town.

My favorite part about staying here is the cocktails on their porch or in their parlor. Since we stay at this hotel theres always room for us. Their cocktails are the best. I always get something with gin and their bartenders are happy to craft something to your preference even if its not on the menu.

I always get a French 75 - gin, champagne and lemon juice.




The Ebbitt Room is their restaurant and its in the lobby, but with Covid restrictions we've been sitting on the back porch. Their food is always PHENOMINAL. This time for our appetizers we shared the Fire Roasted Fingerlings with Garlic Aioli and the Brussel Sprouts with Jalapeno Bacon Jam. I got the Cape May Scallops with Fall Squash Risotto, Saffron, and Pomegranate for my entre. Last time when we were there in July we got the strawberries for dessert and they went down in history as one of the best thing's we've ever ordered!


We also spent an afternoon at Willow creek winery. We got lunch and did a wine tasting. They have a few different wine tastings you can do. Andrew and I ordered two different ones so we could try as many as possible! We always end up liking the rose wines best, but we try them all anyway! Willow creek had live music and some outdoor fire pits that we sat at. Its really relaxing to sit outside here. We've come both times we visited Cape May. The winery is away from the street, down a long drive way so you really feel like you're out of town. There is another, Cap May Winery, we keep meaning to get to but that'll be on the list for next time!

We stopped by Beach Plum farms as well, where you get shop and get breakfast or lunch. We did a little Christmas shopping and browsing. We wanted to eat lunch here when we arrived but we got there a little late and lunch closes at 3. But this is definitely on my list for the next time!


And in case anyone else is gluten free, the Mad Batter is right next door to the Virginia and has gluten free pancakes and they're AMAZING!

Back in January, my New Year’s Resolution was to eat more greens.


It was a success!


I didn’t want to promise myself I’d cut out anything I enjoyed, or cut back on any junk foods. Life is too short ti not eat pizza, but I still wanted to be healthier... so I figured adding more nutrient rich foods was best!

While grocery shopping, I learned to stock my cart full of green veggie options I enjoyed even if I have no plan on when I was making them. I find that whatever is in my fridge I’m more apt to make them.

Benefits of Green Veggies


Green veggies are stocked with so many health benefits.

They can help lower your mortality risk.


Green veggies contain vitamin K, Magnesium, the B vitamins, Calcium, that are critical for cell function and prevent the aging process!

Are you a tofu fan?? I had no idea I was.


We were shopping in target last weekend for some Christmas decor and were browsing the food as well... obviously. Target just sucks you in!


But I saw this harissa tofu and figured I might as well try it. Anddd I was pleasantly surprised.


It got really crispy in the pan! I would definitely make it again.


If you’re not into tofu you can also try this recipe with grilled chicken too!!


ONE PAN HARISSA TOFU RICE



Gluten free


Dairy free


Vegan


Fast metabolism diet approved

Phase 3


Ingredients

  • Harissa Tofu

  • Sautéed spinach

  • Sautéed zuchinni

  • Brown rice

  • Diced sun dried tomatoes

  • Diced Red onion

  • Paprika

  • Garlic

  • Cumin

  • Cayenne pepper


Directions:

1. In a medium sized frying pan, add the tofu and cook on high heat until browned and crisp.

2. @traderjoes brown rice you can actually buy frozen so it only takes 3 minutes in the microwave! When it’s done, add to the frying pan along with the fresh spinach. Let the spinach cook down.

3. Add the sun-dried tomatoes, onions and seasoning and cook for another 3 minutes.

4. Remove from heat, plate and serve!
