ROASTED VEGGIE AND CHICKEN SAUSAGE SALAD 🥗 This dinner is one I make pretty often but don’t always photograph. It’s a go to of mine and it’s not as pretty as some other exciting meals I make but it’s an easy, healthy meal I love.



Ingredients:

2 cups @organicgirl spinach

1 @alfrescochicken apple sausage

1 cup sweet potato cubes

1 tbsp garlic herb seasoning

1/2 cup diced asparagus

1 tbsp @kensdressings lite honey mustard


Directions:

1. Slice the chicken sausage into 1/2” round slices.

2. In the air fryer, cook the chicken sausage, diced asparagus, cubes sweet potatoes (tossed in avocado oil and garlic herb seasoning). Cook for approx 10 minutes.

3. Add the spinach to the bowl, top with roasted asparagus, potatoes and chicken sausage.

4. Drizzle with @kensdressings lite honey mustard.

These BBQ CHICKEN AIR FRYER TAQUITOS are both gluten free and dairy free. Super easy to make and low in fat in case you’re using @myfitnesspal like I am! The air fryer gave them the crunch I was looking for without the unhealthy extra calories that come from the deep fried ones... although those are pretty good too. Not to mention sweet baby rays is the best BBQ sauce out there.




Ingredients:

8 corn tortillas (2 portions)

3 cups shredded chicken

1 cup bbq sauce (@sbrbbq)



Directions:

1. Mix shredded chicken and bbq sauce in a bowl.

2. Cover the corn tortillas and microwave for 60 seconds to make them soft and easy to work with.

3. Fill each tortilla with bbq chicken (approx 2 tablespoons) and carefully roll.

4. In the air fryer, place the rolled taquitos close together to help them not unroll.

5. Spray with avocado oil spray.

6. Air fry on 390 for about 10-15 minutes.

7. I topped mine with avocado, tomato, chives.


These AIR FRYER TAQUITOS are both gluten free and dairy free. They were perfect for an easy Sunday night dinner while we watched the golden globes. The air fryer gave them the crunch I was looking for without the unhealthy extra calories that come from the deep fried ones... although those are pretty good too.

Directions:

1. Mix shredded chicken and salsa verde in a bowl. Approx 1/2 cup salsa per 1 cup of chicken.

2. Cover the corn tortillas and microwave for 60 seconds to make them soft and easy to work with.

3. Fill each tortilla with equal amounts (approx 2 tablespoons) and carefully roll.

4. In the air fryer, place the rolled taquitos close together to help them not unroll.

5. Spray with avocado oil spray.

6. Air fry on 390 for about 10-15 minutes.

7. I topped mine with avocado, tomato, chives and @sirkensingtons dairy free ranch and placed on a bed of lettuce and salsa verde rice.
