These SWEET DIJON GLUTEN FREE CHICKEN FINGERS were everything! I used grounded up @iwonorganics Sweet Dijon plant based protein stix with coconut flour and vegan Parmesan cheese for the breading. Then air fried them for the perfect crispy breading without the extra fat from oil frying!





Ingredients

  • 1 egg

  • 1 lb chicken tenders

  • 1/4 cup coconut flour

  • 2 tablespoons vegan Parmesan cheese

  • 1/4 cup ground Sweet Dijon plant based protein stix @iwonorganics .


Directions

1. Whisk an egg in a bowl and set aside.

2. Combine dry ingredients in separate bowl.

3. Dip chicken tenders into egg, then into dry mix, and set into air fry basket.

4. Repeat until all tenders are breaded.

5. Air fry on 390 for approx 15 minutes until chicken is fully cooked and breading is crispy!



Started Saturday off with these paleo, gluten free, dairy free EGG-SADILLAS, like a quesadilla without the tortilla. They were stuffed with spinach, roasted red peppers, sundried tomato and vegan Parmesan cheese. I made a homemade roasted red pepper sauce on the side for dipping! .



Egg-Sadilla Ingredients

  • 2 eggs

  • 2 tablespoons of coconut flour

  • 1 tablespoon vegan Parmesan cheese

  • 1 tablespoon oat milk


Egg-Sadilla Directions

1. Combine egg, milk, cheese and four in a bowl.

2. In a frying pan, spray with cooking oil and pour 1/3 the batter in. Recipe makes 3 patties.

3. Cook on medium heat for approx 3-4 minutes until patty is puffed up and not wet.

4. Remove from pan, stuff with spinach, peppers and tomatoes and fold in half.

5. Repeat two more times until all egg batter is used.



Roasted Red Pepper Sauce

  • 1 full roasted red pepper

  • 1 1/2 tablespoon oat milk

  • 1 tablespoon vegan Parmesan cheese

  • 1 teaspoon garlic powder

  • Salt

  • Pepper


Red Pepper Sauce Directions

1. Combine all ingredients in blender.

2. Blend until fully combined.

3. Place into dipping bowl and serve.



I made this SANTA FE CHICKEN SAUSAGE BOWL for lunch. It is gluten free, low fat and super balanced. I paired it with a homemade Santa Fe sauce. Overall, the bowl and sauce took less than 15 minutes to make and is perfect for a quick lunch or dinner.




Santa Fe Sauce Ingredients

  • 2 Tbsp lite mayo

  • 1 tsp hot sauce

  • 1/2 roasted red pepper

  • 1 Tbsp bbq sauce

  • 1 tsp fresh garlic


Santa Fe Sauce Directions

1. Half a roasted red pepper from the jar and add to a blender.

2. Add mayo, hot sauce, bbq sauce and garlic. Then blend until all ingredients are fully combined.

3. Add to dipping bowl and serve with salad, fries or veggies!


Santa Fe Bowl Ingredients

  • 1 cup spinach

  • 1 cup white rice

  • 1/8 cup fat free shredded cheddar (opt for vegan cheese)

  • 1/2 avocado

  • 1 chicken sausage

  • 1/8 cup crispy chickpeas
