COPYCAT CAMPFIRE SAUCE and RAINBOW VEGAN BOWL

I made this COPYCAT CAMPFIRE SAUCE and RAINBOW VEGAN BOWL with cauliflower rice for lunch. It is gluten free, grain free, low fat and super balanced. Overall, the bowl and sauce took less than 15 minutes to make and is perfect for a quick lunch or dinner. Also, in case you didn’t know by the name, CAMPFIRE SAUCE is a copycat of the dipping sauce they give you at Red Robin! It’s perfect for any kind of dipping or burger... or in this case salad! It is only 5 ingredients and takes less than 5 minutes to make.

Campfire Sauce Ingredients
1/2 tsp garlic powder
1/3 cup of bbq sauce
1/3 cup of lite mayo
1/2 tsp chili powder
1/2 tsp hot sauce
Campfire Sauce Directions
1.Add mayo, hot sauce, bbq sauce chili powder and garlic to a blender. Blend until all ingredients are fully combined.
2.Add to dipping bowl and serve with salad, fries or veggies!

Campfire Bowl Ingredients
1 cup spinach
1 cup cauliflower rice @fullgreen.official
1/8 cup fat free shredded cheddar (opt for vegan cheese)
1/2 avocado
1 cup air fried potato cubes
1/8 cup crispy chickpeas
Campfire Bowl Directions
1. Dice the sweet potato into 1/2” cubes. Toss in 1 teaspoon avocado oil.
2. In the air fryer, fry the cubes sweet potatoes. Cook for approx 10 minutes.
3. Add the spinach to the bowl, top with avocado, potatoes and crispy chickpeas. 4. In the microwave, cook the cauliflower rice for 2 1/2 minutes. Once complete, add to bowl.
5. Serve with campfire sauce
