Quick Healthy Turkey and Red Pepper Tacos

These QUICK HEALTHY TURKEY AND RED PEPPER TACO are a perfect way to celebrate #TacoTuesday! They’re gluten free and dairy free. The whole meal takes 20 minutes to make, including the HOMEMADE ROASTED RED PEPPER SAUCE.

Roasted Red Pepper Sauce
1 full roasted red pepper
1 1/2 tablespoon oat milk
1 tablespoon vegan Parmesan cheese
1 teaspoon garlic powder
Salt
Pepper
1 teaspoon red pepper flakes
Red Pepper Sauce Directions
1. Combine all ingredients in blender.
2. Blend until fully combined.
3. Place into dipping bowl and serve. .
Turkey Taco Ingredients
1 cup arugula
1 lb ground turkey
1 red bell pepper
1/2 onion
Garlic
Salt
Pepper
1 avocado
6 corn tortillas
Fat free feta (vegan Parm option)
Turkey Taco Directions
1. Dice the bell pepper and onions. Set aside. Preheat the oven to 350.
2. In a frying pan, brown the ground turkey with the garlic, salt and pepper. Once 90% cooked, add the bell peppers and onions and finish cooking the last 10% of the way.
3. In the oven, warm the corn tortillas on a baking sheet for 5 mins. You can leave them in longer for a crispier shell.
4. Place the corn tortillas on a plate. Next, top them with ground turkey mixture, then arugula.
5. Dress the tacos with the red pepper sauce.
6. Top with feta or vegan Parmesan cheese and serve!
