Chicken Mediterranean Bowl

Fast Metabolism Diet option

Phase 1+3


Ingredients

  • 1 cup arugula

  • Grilled chicken

  • 1 tbsp fat free feta (omit for dairy free or fast metabolism diet)

  • 1/3 cup roasted zucchini cubes

  • 1/3 cup roasted potato cubes

  • 1 tbsp diced sundried tomatoes

  • 1 cup White or brown rice (brown rice for fast metabolism diet

  • 2 tbsp olives

Directions:

  1. Add arugula to salad bowl. Top with sundried tomatoes. Set aside.

  2. Grill 1 chicken breast until fully cooked.

  3. Cook your preferred rice.

  4. Dice zucchini and sweet potato cubes. Add to air fryer with salt and pepper and roast on 390 for approx 7-10 minutes.

  5. Add 1 cup cooked rice to the arugula.

  6. Top with grilled chicken breast.

  7. Top with zucchini and sweet potatoes.

  8. Optional topping of feta or olives
