Ingredients
1 cup arugula
Grilled chicken
1 tbsp fat free feta (omit for dairy free or fast metabolism diet)
1/3 cup roasted zucchini cubes
1/3 cup roasted potato cubes
1 tbsp diced sundried tomatoes
1 cup White or brown rice (brown rice for fast metabolism diet
2 tbsp olives
Directions:
Add arugula to salad bowl. Top with sundried tomatoes. Set aside.
Grill 1 chicken breast until fully cooked.
Cook your preferred rice.
Dice zucchini and sweet potato cubes. Add to air fryer with salt and pepper and roast on 390 for approx 7-10 minutes.
Add 1 cup cooked rice to the arugula.
Top with grilled chicken breast.
Top with zucchini and sweet potatoes.
Optional topping of feta or olives
