As you get ready to embark on this journey, consider how you feel. Are you nervous? Confused? Overwhelmed? These feelings are understandable and, thankfully, easily overcome by eating crispy and delicious cauliflower hash browns!! And the best part of this diet is that this 6-Ingredient Healthy Mexican Breakfast Casserole is Hash Brown Diet approved!



6-Ingredient Healthy Mexican Breakfast Casserole


Gluten free


Dairy Free


Nut Free


Low carb


6-Ingredient Healthy Mexican Breakfast Casserole


Ingredients:

6 Cauliflower HashBrowns @StrongRootsUSA

5 eggs

2/3 cup of liquid egg whites

2/3 cup of oat milk

1/2 cup of diced peppers

2 tbsp taco seasoning


Directions:

1. Defrost cauliflower hashbrowns. In a baking dish, crumble the cauliflower hash browns and cover the bottom of the dish. Top with taco seasoning.

2. In a separate bowl combine eggs, egg whites and oat milk. Pour over cauliflower hash browns.

3. Top with diced peppers.

4. Bake, covered, on 400 for 30-40 minutes or until center is set.
