No but seriously, I'm not messing around here... This is for sure the best CHICKEN PARM I've ever made and might even be the best recipe I've ever made. This spin on a classic is perfect for valentine's day dinner!

I made this LOW CARB, DAIRY FREE, GLUTEN FREE, CHICKEN PARM with homemade breadcrumbs.
The gluten free breadcrumbs:
I used @canyonglutenfree gluten free bread! I let 5 slices of bread sit out overnight until they were hard and stale. Then I added them to the food processor with some garlic, salt, pepper, parsley, basil, oregano and onion powder and blended until it became a fine, sandy texture!


Ingredients:
2 chicken breasts
1/2 cup homemade gluten free breadcrumbs @canyonglutenfree
1/3 cup of pork panko breadcrumbs
1/3 cup parmesan cheese
1/2 cup eggwhites
1 cup marinara sauce
1/2 cup dairy free mozzarella cheese
Directions:
1. Sandwich the chicken beasts between 2 pieces of parchment paper and pound until 1" thin.
2. Combine breadcrumbs. pork panko and parmesan cheese in a bowl.
3. In a separate bowl add the egg whites.
4. Dip the chicken breasts into the egg whites, then into the breadcrumb mixture, coating the whole piece.
5. Dip back into the egg white and coat piece in breadcrumb mixture for a second time.
6. Air fry on 390 for approx 15-17 minutes until chicken is cooked through. Flip overhalf way to make sure all breading is getting crispy.
7. Remove from air fryer, and top both pieces with marinara and cheese.
8. Broil on hi for 2-4 minutes until cheese is fully melted.
9. Serve with spaghetti squash and arugula.
